I hated my body, the stretch marks and loose skin. I didn't like the way I looked naked or clothed. I could only see my flaws when I looked in the mirror. But I had it all wrong, I wasn't seeing clearly. The strength and weakness, the beauty and marks, the imperfections and power are all part of my story. Now I love this body of mine that carried 4 beautiful children, overcame a crippling illness and battles a shit thyroid everyday. It wasn't my body that changed,  I  Still have the same imperfections in the same mirror but my mind has changed. I'm choosing to love myself. .

Another super warming winter stew inspired by feijoada - a Brazilian stew made from pork and black beans. Only this ones vegan. 🌱😋 I was craving this and didn’t think it would be possible to make just as yummy if not yummier than the real thing! Here’s the recipe (no fancy photos just a real video of my quick lunch whip up in the middle of the day):. .

Serves 2:
Ingredients
1 x tsp coconut oil 
1 x red onion, chopped into quarters
3 x cloves garlic, peeled
2 x cans or jars black beans, rinsed and drained 
A splash of spring water
1 x can banana blossom/jackfruit (meat substitute - this is optional)
1 tbsp tamari sauce
1/2 tbsp cacao powder 
1/2 tbsp balsamic vinegar 
Salt to taste

Spice mix
1 tsp ground coriander powder
1 tsp smoked paprika 
1 bay leaf
1 /2 tsp cinnamon 
1/2 tsp cumin powder
1/4 tsp turmeric 
1/4 tsp black pepper.

To do:
1. Place the red onion, garlic and coconut oil into a small-medium pot. Place on medium heat and allow to sauté for 4-5 minutes.
2. Add in the dried spice mix coating and flavouring the oil, onion and garlic well .
3. Add in the black beans, mix all ingredients together and add a splash of water allow to simmer for 5 minutes with a lid on.
4. Rinse and drain the jackfruit or banana blossom and cut into bite size pieces of using. Add to the pot with the tamari, cacao powder and balsamic vinegar. Cover with lid and continue to simmer for another 5 minutes. 
5. Add salt to taste and serve :-) super quick easy and delicious. You can slow cook for longer to bring out more flavour, make a big pot to keep for the next day (can be stored in fridge for upto 4 days) and enjoy on its own or on top of brown rice or buckwheat groats for extra protein and fibre.

Very soft and colourful light meal that I combined from:

Smoked Salmon + Soft Boiled Egg (5 min of boiling) + Avocado + Tomatoes + Homemade Spinach Hummus (from 2 tablespoons of Tahini, 2 cans of Chickpeas, and 2 cups of Spinach) + Basil Pesto + Seaweed Flakes, Milled Chia, Marjoram, Dill, or other spices and herbs

This is one of my all time favorite risottos to make. Radichio Risotto: saute chopped onion in olive oil till tender, add arborio rice and on head of chopped radichio and cook for two minutes while stirring. Add vegetable broth and cook on medium heat while stirring. Keep adding broth as needed till rice is cooked but not mushy. Add cream and parmesan cheese if not vegan. Add cashew milk and nutritional yeast if you are vegan. Add salt to taste.
